          When making muffins you need to work quickly. Ensure you have 
          all ingredients and your muffin pan ready before you start. Take great 
          care not to overmix. 
        Ingredients:
         1 cup wholemeal flour 
          3/4 cup flour 
          3 1/2 teaspoons baking powder 
          3 tablespoons sugar 
          3/4 cup of milk 
          1/4 cup of oil 
          1 egg 
          3/4 cup of fruit mincemeat - drained 
        Putting it together:
         Stir all the dry ingredients together. 
          Combine the liquid ingredients and the fruit mincemeat and add all at 
          once. 
          Stir only until the ingredients are mixed. 
          Bake at 200c for 15 to 20 minutes. 
        Makes 12 muffins. 
        Variations: 
         You can lower the kilojules in this recipe by substituting sweetener 
          for sugar, apple puree for the oil and use low fat milk. These are great 
          either way.
           
         Note: 
          If not eaten straight away, muffins can be stored in the refridgerator 
          and warmed before serving. Muffins freeze well.
