Savoury Cheese Biscuits

Ingredients:

100g (100g) soft margarine
50g (2oz) ground rice
50g (2oz) self-raising flour
50g (2oz) wholemeal flour
75g (3oz) mature cheddar cheese - grated
1/2 teaspoon salt
1/2 teaspoon mustard powder
a good pinch cayenne pepper

Putting it together:

Put all ingredients in to a bowl and work together using a wooden spoon until well mixed. Turn out on to a floured surface and kneed well. Shape into a 15cm (6 inch) roll and chill in the refridgerator for an hour.

Heat your oven to 180c (350f). Grease 2 baking sheets. Cut the roll into thin slices. Place on baking sheets and sprinkle with some extra wholemeal flour. Bake in the oven for 15-20 minutes until pale golden brown. Cool on a wire rack. Store in an airtight container.

As a gift
These biscuits go really well with Fresh Herb Cheese or Pate. Pack the biscuits carefully as they are crisp.
